Last Days of Summer: Tex Corn and Black Bean Salad

Summer is almost over.  But there is still time to partake in the end of summer veggies.

Soup and stews are coming soon, but there is still time for salad.

This week, I’m going to be rolling out 6 of my favorite summer salad recipes.

They’re easy to make, and the ultimate goal is to get you to learn how to throw together a salad without a recipe.

I partnered with my dear friend Lindsay from Lindsay Goldner Creative, who is a top notch graphic designer with amazing branding skills.  These make great recipe cards to put on your fridge.  Watch out for the PDF next week.  Lindsay’s shop Pop Fizz Sparkle is also opening soon, and you’ll be able to buy stylish mugs, totes and prints with these adorable icons.

Without further ado, here is the first recipe for Tex Corn and Black Bean Salad.  Black beans are always in season, and if you can still find corn, great.  But frozen corn, in a pinch, is also fine to use.
